VM very high cpu

Hi everyone, I'm quite new to proxmox world so I apologise in advance.
I was trying to set up my pc as a windows 11 vm, in order to be able to try other os.
I followed some guides on how to properly install it, and passthrough gpu.
Initially everything seemed to work fine, I used my pc for 2 days. Out of the blue (I don't recall having made some modification to the config to cause that) the vm is unusable: always high cpu and ram usage (almost 100% all the time). What could it be?
Secondly, when switch on the machine now the screen its stuck with
"/dev/mapper/pve-root: clean, 53363/14680064 files, 46630253/58689536 blocks"
I would like to be able to fix all of that, in order to have not only a fully functional machine but also properly configurated for future experimentations!
