Sounds like a storage problem to me. Did you check the SMART stats or did you do a SMART selftest to see if the disks are healty? Maybe a loose cable? Maybe problem with the controller? Buggy disk firmware or BIOS that could be updated? Maybe a crappy QLC SSD or SMR HDD that just can't keep up with the load? Or HDD/SSD is overheating? Bad PSU? Bad RAM? There are alot of things that could cause IO errors.
