VM In Grub Recovery after node reboot

Hello all,

I am running ProxMox v6.4-6 and after a reboot of the node, my plex server that is massive and would really suck to have to rebuilt, is stuck in the grub recovery. I am not sure how to get this fixed. The virtdisk is there, everything appears fine, I am not sure how it happened or how to fix it.
This server has all my wifes shows and movies and I am a DEAD MAN if they are gone. Please help, any help is appreciated!

Entering Rescue Mode
It actually looks like the entire /boot folder is missing.
I am thinking I could load a live image but can not figure out how to load a "USB" ISO to boot into a live environment.

I ended up just moving over to my new server with ProxMox 7 and manually mounted and extracted the data from my containers.
