VM - how to Backup only "scsi0" drive using GUI?

Hi,

I have a VM with TrueNas running and currently 2 Datadisks.

How can I create a Backup only for the local-lvm VM disk (green) excluding the Data disks (red)?

Proxmox does not support making a backup of just a virtual disk. You can make backups of the whole VM ignore a virtual disk by unticking the Backup option of the virtual disk (click Edit after selecting the Hard Disk of the VM). Be aware that a restore of the VM backup will first delete all virtual disks and then only restore the virtual disk that was backed up.

From your point if view, what would be the best option to setup TrueNas to be able to take Backups without Data disks included.

Disable the Backup property of the disks as mentioned. Note that people usually recommend against passing virtual drives/disks to TrueNAS.

If you can do without TrueNAS you could also let the node itself manage the ZFS pool and then provide shares via a CT or VM which you can give a virtual drive from that pool/storage.
