Is there any documentation out there on the multitude of vCPU's you can choose when configuring a virtual environment? I.E. which ones are best for curtain use cases etc. I would be interested to see as my company has decided to start hosting some of it Virtual Environments within Proxmox and it would be nice to be able to sift through the data.

It would be interesting to have more information about the use cases you are referring to, because it is very dependent on how you want to use Proxmox VE. For example, if you want to be able to do live migration between nodes in a cluster, where the servers themselves have potentially different CPUs in use, you need to set the (v)CPU type to be compatible with all of them. If it is essential to have specific CPU flags set for your workloads, then you need to choose a specific CPU type accordingly.

The PVE admin guide has a quite thorough documentation on CPU and vCPU types at [1] and I'd recommend to you to read the whole CPU subchapter at [2] (which includes [1]). This should be able to give you an overview what types are available.
