Using Proxmox as NAS for different VMs + Windows Clients

There is no problem in virtualising Truenas. I am sure your problems are due to the way you implemented it. You didn’t give any details about your installation. I have Truenas Scale virtualized on Proxmox, and works perfectly. I use Proxmox for virtualization of all my VMs including the Trunas Scale. I installed an LSI HBA ctrl. in JBOD mode (non-raid) in the Proxmox server and passed it through to the Truenas VM. I connected the drives to the HBA and automatically Truenas is seeing them and creates its volume. This way the ZFS volume is not virtualized, but just the OS disk is. It works perfectly, and BTW the Trunas GUI is very nice, I don’t understand your complaints. Also what’s the reason to use TN Scale for virtualization when you have Proxmox for that.
I have been contemplating converting my windows pc to proxmox. Already have another 3 node proxmox cluster and like it very much.

1 run blue iris, and hyperv with truenas on the windows. (plus a vm for proxmox backup server)

So the idea is to install proxmox, windows vm for Blueiris and another vm for truenas or openmediavault possibly.

...my configuration is really simple.. all zfs managed by proxmox, a debian 11 container running samba on a local mountpoint on the zfs with files directly written in the zfs without virtual disks...

easy.. simple..fast...
 
... Instead of virtual machine to have a simple sharing service.. could be interesting to focus on the zfs ... Like email script notifications about the zfs cluster etc...
 
I tried NAS virtual machine on Proxmox with dedicated HDDs; it is not working because when one HDD crashes the VM NAS will stop.
A normal NAS will continue to work, and when the HDD is replaced, it will do a rebuild without interruption.

I was not able to get proxmox to find a work around to this problem.

Just pass-through a controller, then this won't happen. And this is the recommended way to "do it right" for more than this reason, you know...
