Use additional nvme disk post proxmox installation

Grettings,

So, I mad a poo poo I guess.
When installing PVE I didn't do RAID1 on my two NVMEs. So current situation is, that I have two 2TB nvme's available, but I installed it without any RAID, did do some strange partitioning tho.

1. Correct me if I'm wrong, but I created 500GB partition for proxmox (nvme0n1p3) but proxmox then created some extra partitioning?

2. Can I create RAID 1 only for this partition with nvme1n1?
3. Can I use the rest of nvme0n1 (1.3TB) for speeding up my proxmox in some way?

The rest od disks is bunch of slow HDDs which I'm gonna put into raidz1 for storage/tank, server is meant for backup function of my main server.

Are you talking about ZFS RAID?
The Proxmox VE ISO installer does create a couple of partitions on it's own.
The drives in RAID should have equal size.
Generally, it is possible to use NVMEs to speed up slow pools, but I wouldn't use a partition for that.
I'd suggest you get one (or even better two) small SSD and install your Proxmox VE host on that small disk.
Then you can wipe your two 2TB NVMEs and recreate them as proper ZFS mirror.
