Is there any simpler way of upgrading ubuntu appliance from 8.04 to 11.04 than creating new VE from a new template and configuring it and installing everything from scratch?
I personally never tried updating from 8.04 to 11.04. but I suggest to run only long-term ubuntu releases (e.g. 10.04). just make a backup and try, also consult the ubuntu docu.
