I have an old proxmox system that I would like to update. pveversion says pve-manager is 7.3 and I even cant install a container with a recent debian. The problem is that I still dont feel prepared enough to do a total reinstall as I should. Is there some safe way to upgrade the system? I really need to migrate an mdaemon VM to postfix, and I would like to use a recent debian, not an old one.

First update to the latest 7.4, which is easy and mostly risk free: https://pve.proxmox.com/pve-docs/pve-admin-guide.html#system_software_updates (note that this one is for 8.x but minor updates are the same)

What gave you the idea that you need to do a "total reinstall"? There is an upgrade guide from Proxmox: https://pve.proxmox.com/wiki/Upgrade_from_7_to_8 (also linked several times on this forum: https://forum.proxmox.com/threads/proxmox-ve-8-1-released.136960/post-608379 )

Yes, see the Wiki link that I provided you. It also contain information about known issues and how to check if the system is ready to update to the latest 8.x.
