I'm jumping in from Unraid to Proxmox. I have Plex installed in an Ubuntu 20.04 VM on Proxmox. Proxmox has setup a LVM on sda. I believe all of my movies are on sdb which is not mounted, so I can't be sure. How do I get sdb accessible to the VM so I can watch my movies on Plex?

With VMs you want bind-mount stuff so you basically got 2 options:
1.) attach sdb to your Ubuntu VM (pseudo-passthrough using "qm set"). Problem is that only this Ubuntu VM will be able to access the disk and so other VM/host can access the data on it.
2.) install a SMB/NFS server so it can share your movies over the network and your Plex VM could then access the movies using SMB/NFS shares. You could for example create a NAS VM/LXC like OMV for that. Proxmox itself doesn't offer NAS stuff like serving network shares and so on so you would need to set it up by yourself using the CLI.
