I have a PBS installed as a virtual machine in PVE, a 10TB disk (PBS) is connected to it, I want to cut the disk to 5TB (since no more space is being used), and the space on the physical disk is needed for another server. Please tell me how to do this cutting.

How ?
vDisk in a Datastore ? Disk passthrough ? HBA passthrough ?
This is what the PBS looks like (in the form of a VM) on which I want to trim the disks

Give more details about how those ZFS disks are used. Are they each in their own zpool? All in the same zpool? Something else?

Zpools don't support much reconfiguration. You'll probably have to back up all the data in the zpool you want to change, rebuild a new zpool(s), and restore the data.

Yes, each disk is a separate pool. 4 disks = 4 pools

So it’s better to add a new disk, create a pool and transfer all the data into it?

Yes. That's what I would do.

Also, in case you didn't know, you can divide the disk into partitions and assign a subset of the partitions to a pool. I would do this with only one partition, though. Otherwise, on a spinning disk, performance will take a big hit.
