I have problems to start an specific VM on PVE 7.4-18, when I try to start I get error "timeout waiting on systemd" but this is only to specific VM not for all, another ones start and stop without problems.

Could you check if the VM might still be running with qm status 101 and systemctl status 101.scope? It might be that the VM got stuck during a task before (e.g. a backup) and wasn't started again. If it seems to be running, you could try to stop it manually with systemctl restart 101.scope.

Good morning, after a few minutes I can start the VM without doing anything. However, it turns off at random times, affecting production

The VM is stopped again

Hi,
how does the load on your system look like around the time the issue occurs? E.g. the output of grep '' /proc/pressure/* might be interesting. Please also share the excerpt of the system log/journal from around the time the issue happens.
