Hello simrsta, did you already read the documentation on Maintenance Tasks? It explains pretty well what the different tasks are meant to do.

How you want to set it up depends on your use case. What are you using the Proxmox Backup Server for? How large are the backups and how long do they need to be kept? These are questions that you have to ask yourself, and always depends on your use case.
