Storage Question

Hi, I'm setting up Proxmox as a home lab media server for learning and fun purposes :) I usually use bare metal ubuntu server with lxc for various containers but id like to go with Proxmox as I got really close to passing my iGPU through to a VM for gaming and eventually I will buy a dedicated then I will have a pretty good htpc/server setup.

I have 1 x 8tb, 1 x 2tb and unlimited gdrive via rclone what would be the best setup for sharing this with various containers/vms? I could mount it all on the host and combine with mergerfs to make it appear as one drive? create NFS server VM? does anyone do anything similar, I will be running Plex, Sonarr, Deluge etc also eventually a gaming VM windows or maybe Steam OS 3?

Both disks are HDDs? I would recommend atleast to use a Non-QLC SSD as VM/LXC storage.
