Just a quick tutorial which works here for following Hardware.
CPU-Type in use:
- Intel(R) Xeon(R) CPU E3-1260L v5 @ 2.90GHz
- Intel(R) Xeon(R) E-2278G CPU @ 3.40GHz
- Intel(R) Xeon(R) CPU E5-2667 v2 @ 3.30GHz
- AMD EPYC 7343 16-Core Processor

VM-Setting CPU:
cpu: IvyBridge,flags=+aes

GuestOSes tested: Windows Server 2016/2019/2022, Ubuntu 16, 18, 20, pfSense(BSD) 2.5, Sophos UTM (Linux Suse-like)

Live-Migration between all CPU-Types possible with KVM64 it was not....

To be testet currently not in use:
- Intel(R) Xeon(R) CPU E5-2643 v4
- AMD EPYC 7351P 16-Core Processor

Overall-Performance compared to CPU-Setting "HOST": so far not much difference under light and medium workload....

Maybe this helps someone....
Tested with Proxmox 7.0.11 and 7.1.7
