As seen in the YT link, I got to the boot.efi command step, but it is just rebooting to opencore boot menu instead of MacOS Setup.
I followed the video exactly, except for having to choose raw disk when Proxmox VE offered additional options to choose either QEMU or Raw Disk when setting up the VM. I'd made the old way of opencore hackintosh work before, so I'm not a total stranger, but a noob at heart... just a musician trying to make use of an aging rig.
I am running 5600x, 16gb RAM, GTX1070, Samsung evo ssd, and an msi board. Maybe it's because I followed the Proxmox tutorial that let me combine the iso storage and the local storage...? maybe that's messing with the iso loading again as it loads...? I dunno.

**Edit - The reason why the VM failed to install properly was because I didn't leave enough ram for proxmox to use haha I didn't realize it needed at least a few GB of ram for the PVE to run.
