How do I configure my host to use a particular local SMTP host? What configuration file do I need to edit?
 
I think you should use the transport option
in postfix. The main config file is /etc/postfix/main.cf
 
Okay that's what I thought - except when I went to do that I found out that there isn't a main.cf at /etc/postfix/. So is it in a non-standard location or does this file not have to exist?

I know that messages are being generated and I know the server is trying to send them because I get a report from our network that a system I own appears to be trying to send mail without using the proper SMTP host.
 
At all my pve hosts the config file main.cf exists in /etc/postfix/
it is the config file of postfix, it should exist.

Is your install a fresh 1.2 installation or a modified configuration?
 
It's an upgrade from a standard 1.1 install, but I still haven't made any modifications to the system.
