you can already do this, you just have to create a seperate datastore for each cluster for now

Okay but to do this you would need to wipe an existing datastore and split it into two.

Are there any plans from you to use one datastore for multiple PVE clusters?

yes, not everything in development planning is on the roadmap, as that is not updated that often
