Hi is there a guide on how to get started with a self hosted mail server? i.e. no relay /direct and also having the user accounts without ldap or anything else?

Not by Proxmox - but you can find tons of guides on the internet with this as their main topic.
Also there are quite a few ready-to-go solutions for a self-hosted mail server.

PMG is a Mail Gateway (or Proxy) meant to relay mails between the internet and your internal server - thus we don't provide a guide on how to set up your internal server
