Restore Windows VM

I had to re-install Proxmox server but I forgot to backup one of my Windows VM
I still have access to Windows disk which was located on different disk however I do not have access to EFI disk
Question:
Is there a way to restore this Windows VM?
Or at least mouth this Windows VM disk and copy files?

For Linux based systems, you need to recreate the entire VM from scratch.
And then reattach the old VM disks and change the boot order accordingly.

I would assume this is also true for Windows based VMs. (Plus all the Windows specific settings like a Virtual TPM.)
 
(Fingers crossed that you have a backup.)

You may try do the repair way: Create a new VM with the same vmid of your old Windows VM.
Mount the existing disk to it and start the VM via a Windows ISO matching the version you had running.

Maybe if you are lucky there are some things like "repair the existing system" or "reinstall keep setting".
There are also sites which would describe how to reinstall a bootloader for Windows (internet search is you friend) - e.g.: https://woshub.com/how-to-repair-uefi-bootloader-in-windows-8/
