I don't know if it's somewhere put together, but on individual components (there's not that many, after all), you see it quite detailed in debian/changelog, e.g. pve-manager: https://github.com/proxmox/pve-manager/commit/3e0176e6bb2ade3b9031c4b179f29315fa8c4acf
