I am relatively new to Proxmox, so please be gentle . I have quite a bit of experience with VMware, so the general concepts are not foreign to me. I am currently building a "new" lab workstation, and would like some advice specific to the disk configuration. I have provided the general build details below. Essentially I am looking for the best disk configuration for the disks I currently have available, and their intended application. If the recommendation is to get rid of a disk or two, or buy another disk or two, that's not out of scope. However, I would like to use what I have now if possible.
The lab server will be used for just about anything including hosting multiple Windows and Linux VMs, and virtual firewalls. My intent is to build mini enterprise infrastructure on the system to include DNS, Active Directory, mail server, miners, web hosting, a file server, virtual firewalls, NextCloud, etc. The workstation will be connected to a 10gb network segment. I will be using an external NAS for backup purposes. And yes, I realize that building a hyper-converged solution is not redundant.
I would like to get the absolute best performance out of the hardware available, while still retaining good data integrity.
Please let me know if additional detail is required?

Below are some inital thoughts on how the disk could be utilized, fully knowing that it's probably not correct.
ARC (128GB) = 8 x 32GB RAM (256GB DDR4 Reg ECC 2400)
RAID-1 VDEV "Root" (500GB) = 2 x Samsung 860 Evo (500GB) 2.5" SSD
RAID-1 VDEV "L2ARC" (500GB) 2 x Samsung 970 Evo (500GB) M.2-2280 NVME SSD
RADIDZ2 "Data" = 6 x Seagate IronWolf NAS (6 B) 3.5" 7200RPM HDD
SLOG = 1 x Intel Optane 900P (280GB) SSD
