Proxmox ISO or Debian Installation, which would be the best option for a Production server?

If you do not have any specific reason to use the Debian installer, the Proxmox ISO is preferred.

I read in a forum that the Proxmox ISO does not allow disk partitioning, however with the installation from Debian it can be achieved.

If you need a special partition layout and are not comforable enough with LVM to change it afterwards, do it the Debian way.
 
Also keep in mind that the Debian installer isn't supporting ZFS in case you need that for software raid or replication between nodes.
