I ordered a server from OVH and installed Proxmox through there template when I went to storage to setup RAID5 w/ ZFS Proxmox was only showing two drives, I'm unsure why the third drive isn't showing and I tried playing with the template but couldn't figure it out.Capture.PNG

Raid5 (called raidz1) is bad if you want the drives to be a fast VM storage (what I think is what you want if you bought NVMEs). I really would recommend raid1 or raid10 (so mirror or stripped mirror in ZFS terms) with 2 or 4 drives. And that screenshot looks like you are setting up a LVM and not ZFS.

I went through the same "trouble" recently, but my configuration had 4 disks. You need to select custom setup and there is a question there "Do you want to install it solely on the first disk?". Apparently that will install everything in one disk and leave you the other 2 disk, in which you can only setup a RAID1 storage and not a RAIDZ-1.
