That sounds very interesting and could be a great add-on for a future version of Proxmox PVE...

FYI: Open vSwitch has reached 1.0.
So it would be a great addition to Proxmox. I will make a test installation and report my findings...

Indeed, I have only looked at it quickly... but it could add some nice functionality that other virtualization products have, such as ESX/ESXi.
