I have not used that NUC, but I have used NUCi7DHNE https://www.intel.com/content/www/us/en/products/boards-kits/nuc/kits/nuc7i7dnhe.html We are using 64GB of RAM though. 1TB NVME and 1TB SATA SSD. It has Windows Server 2019 on a VM. What will you be running on it?
