Newbie taking the plunge

Hi first sorry if I use the wrong terms my experience is using hyperv and a out to take the plunge with proxmox

Ok so I have 6 computers I use at home and need to reduce my electric bill so having 1 machine to do all of it is tempting.

I only have a 3770 which supports vt-d. An Intel motherboard 32gb of ram. 6 SSD and 5 HDD and a Nvidia p400. A 4 port intel nic and the mb has 2 NIC ports.

I have spent all week trying to get Ubuntu server 20.04 as small as possible and got the micro iso which once installs uses 100mb of ram. And managed to get the power settings on the install to on-demand which I am aware will increase as I start to add services.

So I am envisoning for 3 people

Proxmox
Pfsence (4gb of ram 4 cores)
Ubuntu server 20 for pihole (2gb of ram 2cores)
Ubuntu server 20 with a lemp stack (8gb of ram 8cores)
Open media vault (4gb of ram 4 cores)
Ubuntu server Plex (4gb of ram 6 cores) with pcie passthrough for gpu as I have Plex pass

On testing the stand alone installs none of these max out the cpus 3.90ghz due to the on-demand and I will never be using the open media valut while I watch Plex.

I don't know if I am thinking of this In the right way as only the lemp stack will have the 8 cores.

I added an extra 2 Sara ports to the mini pcie on the intel motherboard. And one of those 1x pcie 6 port sata things.

I have 2x1tb crucial Mx 500 SSD for the lempstack
2x 500gb mx500 SSD for the VM drives/os
2x 8TB drives for Plex media
3x 16tb drives for open media vault.

I was thinking to use the 2x 120gb as swap drives.

Now on hyper v I was making one virtual disk on a nmve drive and one on a normal hard drive for a pagefile/swap for each VM.

Is this something I need to do on proxmox?

Is this likely to even work on this old i7?

All the machines I have are i7 3770 and my electric bill is massive each month. So I can live with 77w in one machine. I don't have budget to just grab amd R9 3950 yet but I need all these servers so I can get another job as I run alot of Excel VBA automation and report delivery.

If this is too much then I would rather it's too much which is why I have been looking at getting the power save features working on the installs as I learn about each one.

Pfsence on metal setup has never used more than 1gb of ram and 2% CPU on hiadaptive mode in 4 years. V2.5 even lower it never gets over 1%.

I hope I make sense in what I am asking as I really need to save money now unemployed. And being older (49) I might be too old for another job so I might have to start a repair service as a means to an end and I need an environment to carry on learning in.

Please be blunt as I might be misunderstanding about how to balance all of this out.
