Have a Xeon quad core server with 8 gb ddr4 ram and 1 TB SINGLE SATA drive

I would like to run 2 VMs (Ubuntu with Plex and my home PBX server)

What is the best setup to use as far as storage with 1 physical drive

I would like to put my media files in here for Plex to index/serve also

Do I need another physical drive?

Just not quite clear on the best way to share the local file system/single drive between everything/

With one drive, almost every out-of-the-box storage is fine for your purpose. Depends if you want to look at your disk image in a file system or via command. Read the available pros and cons here: https://pve.proxmox.com/wiki/Storage
