New v5 Proxmox install advice

What hard drive install options should I use for installing Proxmox 5 on a single new 480GB SSD (PM863 or SM863)? What if I use both SSDs for redundancy? Should I manually set the maxroot/maxvz sizes and what ratio/size do you recommend?
 
I briefly tried an install with EXT4 & LVM and another with ZFS RAID-0 on a single disk, and I find those file systems & mounting points confusing and not very straightforward. It did look like the ZFS setup used only 1 partition between root and the image storage which is nice (not having to decide on a particular split) but I wouldn't know how to mount the drive in another system for recovery purposes. My needs are quite simple I think. Can I use the installer without ZFS or LVM, just a simple Ubuntu style EXT4 setup?
