New user storage setup suggestions please

Hello all from a new user ( be gentle ) !

I am at the point configuring a new PVE server and will have three SSD drives: 250GB and 2x1TB

I was thinking to install PVE OS on 250GB drive and use 1TB for ISOs and the other 1TB or VMs (not sure if that can be changed later, can it?)

This server for home use, will host some VMs (possibly only when VMs must be used as for Windows 10) and also want to use small CT for linux based web services.
So would like to avoid complexity at this point until I feel more comfortable with managing proxmox.

My question is - what would be most flexible and yet simple recommendations to use my drives for storage ?

Yes, you can make this at any time .

Your plan is flexible enough if you do not want some kind of redundancy for your VM/CT. Maybe it will also good for you to define on your ISO ssd/storage also as a backup for your VM/CT.

How exactly do I do this ?
Define a new drive as LVM and select those as purpose ?

Create a new Folder on this SSD, and then add this folder:
You can go in Datacenter-Storage, add a Folder type, and then select for Content VZDumpbackup file.
