New to proxmox. Initial questions

Hi guys, how is everyone doing? I am new to proxmox and I am already loving it. Just have some questions. Thanks in advance.

1) If I have a dedicated server with 32GB of ram, I shoudn´t assign all that memory to vm´s right? I must leave some unasigned memory for proxmox?
2) Same happens with CPU cores? should I leave some free cores for proxmox?
3) How much CPU units do you assign for each core? I read all the documentation for that and still cant get how much CPU units are fine for each vm.

Yes. If you are using software raid, ZFS will use 50% of your RAM. If not using ZFS Proxmox got a very small memoery footprint (2GB for Proxmox should be fine).

Yes, if a guest would use 100% CPU utilization the host can't keep up. Just make sure your hosts CPU utilization never reaches 100%.
3) How much CPU units do you assign for each core? I read all the documentation for that and still cant get how much CPU units are fine for each vm.
I use the default 1024 for every VM so all VMs are weighted the same. This only takes into account if your CPU is at full utilization. So if you make sure that your CPU isn't fully utilized this can be ignored.
