Networking only works after first install

Real newbie to proxmox just trying to understand if I should use it. I installed this from a USB stick and all worked fine. I shut it down and restarted and the network was not working. I tried all sorts but no lights on the network socket at all from the moment Proxmox began to load. I reinstalled from the Stick and the network worked fine again, until I once again shut it down.

Any ideas what makes the network work once after installation and then not again until I reinstall?

That sounds like Proxmox gets an IP from a DHCP server (probably your router) but Proxmox does not use DHCP once installed. Therefore, it does no refresh the IP and the router assumes Proxmox is no longer connected, while Proxmox assumes the IP is forever valid. Chose a static IP address outside of the DHCP range and configure that for Proxmox.
