Ok kinda learning as I go, ok I took a old gaming tower to turn into my first home lab. This is what I have, water cooled i7 on a gigaByte MB, gtx 550 ti, 1x 3tb, 3x 500 gb. I’ve been kinda learning through reading and YT, from what I can figure out is when you install pro mix it uses a drive for itself and vm’s. One of the YT’s I watch had said that it uses quite a bit of space where it installs and you can make that particular space smaller to get more from the drive. My question/questions are should I worry with that and how would I set up the drives. I know this is kinda open ended

If you want to have redundancy in your data, I'd recommend using (and learning about) ZFS on the 3x 500 GB drives. You could run raidz1 on them and use the 3 TB forbackups or not so important data. With that you can play around with ZFS, have redundancy and don't care about the PVE install itself, because all space is available in your zpool.
