Hey everyone - new to proxmox here and doing a POC. I have 2 hosts configured with SAN storage via fiberchannel configured with multipath (2 HBA's).

In the GUI the storage shows up under usage as "MPath_Member" for each path (so 4 timers).

The /dev/mapper folder shows the WWN for the MPath disk

My question is (being new to proxmox) how do I setup the disk now? Do I have to format the LUN and partition it via the WWN listed in the /dev/mapper folder?

Now that you have the FC storage and Multipath working, you need to supply PVE with a suitable storage that it supports.

In your case the simplest built-in option is Thick LVM. It will allow you to use your FC storage as shared, however it does not support Snapshot functionality.
You can create the LVM structure via GUI by going to Nodes>Node>Disk>Create Volume group . You only need to do this on one of your nodes.
Afterwards, you will create an LVM storage with base group and mark it shared.

Technically, this is not a Proxmox operation but rather Linux administration. The act of creating the Volume Group is somewhat "formatting".
LVM is a volume manager, that will treat your physical disk as a Pool (Volume Group), the PVE will further slice the VG using another LVM technology - LV (logical volumes). These will be passed through to your VM as raw devices (disks), which you can format with your desired file system _inside_ the VM.
