Which raid1 configuration would you prefer for 2x SSD as boot drives ?

- ZFS raid1/mirror (choosen directly in Proxmox installer)
- mdadm raid1 (Debian Jessie minimal installation with Proxmox on top)

If one drive fails in a zfs raid1 with root fs, will it easily be replaceable?

ZFS for everything. Replace is possible and you should learn how to do it (inside a Proxmox VM with installed Proxmox on two disks).

mdadm is not supported and inferior to ZFS.
