Make a snapshot without the external disks

Hello to all,

I have a debian11 VM that I use as a NAS.
On this VM I have mounted several hard drives directly on it.

I would like to be able to backup the state of my system without necessarily having the files of the external volumes...
I would like to be able to back up the state of my system without having the files on the external volumes,
 
Making a snapshot while running without all disks is problematic as some information is in cached memory and won't match (some of) the disks when you roll back to that snapshot.
Maybe it is possible when the VM is shutdown but I don't know a way to do it, except for removing the virtual disks and adding them again after the snapshot.

Alternatively, you can exlude virtual disks from backups and maybe use backup and restore instead of snapshots?
