Tracking Ceneter does not log incoming messages exceeding the maximum size.
Is it possible to customize the display of such connections?

I don't think that this is easily possible - a quick test here shows that these messages are not even send - the sending mailserver terminates the connection after EHLO - since the server response of PMG already contains the maximal message size ...

In a quick test this is the logs I get on PMG from such a connection:
Code:
Jul 07 15:50:45 pmg7 postfix/postscreen[113163]: CONNECT from [192.0.2.70]:45870 to [192.0.2.66]:25
Jul 07 15:50:45 pmg7 postfix/postscreen[113163]: WHITELISTED [192.0.2..70]:45870
Jul 07 15:50:46 pmg7 postfix/smtpd[113164]: connect from sender[192.0.2.70]
Jul 07 15:50:46 pmg7 postfix/smtpd[113164]: Anonymous TLS connection established from sender[192.0.2.70]: TLSv1.3 with cipher TLS_AES_256_GCM_SHA384 (256/256 bits) key-exchange X25519 server-signature RSA-PSS (4096 bits) server-digest SHA256
Jul 07 15:50:46 pmg7 postfix/smtpd[113164]: lost connection after EHLO from sender[192.0.2..70]

so there is really rather little to go on ...

do the logs look similar in your cases?
