Linux VM frozen

Hello together,

I've a really annoying problem with proxmox 7.1-11 and I'm hoping somebody can give me a hint.
System: Shuttle DL20N6 (https://www.shuttle.eu/de/products/slim/dl20n6) Silver N6005 with 16GB RAM and Samsung 970 plus. I'm not using zfs.

First problem - after Installation or proxmox:
Proxmox crashs right after start because of the NVMe power state.
"nvme 0000:03:00.0: cant' change power state from D3cold to D0 (config space inacessible)"
I managed to solve this by adding "pci=nommconf" to grub. If there is a better solution or if it is known to be solved with 5.15 - I'm happy to hear.

Second problem:
Since proxmox is running with the hack above I added a debian 10 vm which seems to work just fine. However, after a few days (5-20 days) the vm is not responding anymore (can't ping, proxmox console shows login, but you can't enter anything).
The CPU shows over 100% (like 100,46%), memory didn't change, but disk IO and network is zero.
The only thing you can do is stopping the vm and starting it again. I can't find any errors in the logs in the vm and in proxmox I don't see any errors either.
Since this has happend the sixth time today, I was hopping somebody can give me a hint what todo.
BTW: I already tried adding "AIO=THREAD" to the disk because I read this may help for Windows systems, but for debian it didn't make a difference. SCSI controller is "VIRTIO SCSI".
