Why does Proxmox 7 was launched with Linux Kernel 5.11 (EOL May 2021) instead of 5.10 (LTS release)?
For servers, I think LTS (long-term support) is a better option. Proxmox 6.2, 6.3 & 6.4 includes kernels 5.4 LTS as default option.

If it's related to hardware support, then you can include LTS release as default option, and last recent stable kernel version as extra option.
