Having received no real solution about my issues with networking [see: https://forum.proxmox.com/threads/one-node-down-network-issues.87856/#post-385078], I have decided to reinstall the whole node.
I have proceeded as usual:
When the machine rebooted, it could not be pinged.
So I did an ip a and there it was again: the Ethernet interface had disappeared. As a result the bridge vmbr0 was ineffective.
I tried to mount the NIC using ifupdown -a but it did not work either.
So, my conclusion is that the latest update is incompatible with my NIC.
Here is what a dmesg | grep eth reads:
Since then I have reinstalled the whole Proxmox (third time...) and the NIC works again fine.

PS. Just for the record, the machine is a Lenovo ThinkCentre M715q

- install from USB flash disk -- version is Linux 5.4.73-1-pve
- Then proceed with the Web interface to declare the machine as a cluster node
- > everything was doing fine and I did NOT install any container nor VM
