Issues installing macOS Sonoma - Seems to get stuck near the end of installation

Hi all.
I'm facing this issue where everything seems to run all good but, near the end of the installation, the install seems to get stuck at "Could not verify trust (5) using MobileSoftwareUpdate policy. Will try basic X509." I let it sit like that for a few hours but it never progresses.
I've been following nicks guide here: https://www.nicksherlock.com/2022/10/installing-macos-13-ventura-on-proxmox/ and I go through the recovery method as I don't have my own mac.
I'm running Proxmox on old hardware, a PowerEdge R620 but I doubt it would've gotten this far if it was entirely incompatible. I've also been using hackintoshes on and off for a few years and I've never had it get stuck here before so I'm a bit stumped.
