IPv6 IP's from subnet routed to VPN Clients?

Hello,

I have following setup:

Proxmox Host system with 1x IPv4 and this IPv6 Setup:
iface vmbr0 inet6 static address 2001:xxd0:xxx:2b5::/64 gateway 2001:xxd0:xxx:2ff:ff:ff:ff:ff

and the first VM has IP: 2001:xxd0:xxx:2b5::1
and the second VM has IP: 2001:xxd0:xxx:2b5::2

the second VM is setup as a Pritunl VPN server, when clients connect they get the VM IP: 2001:xxd0:xxx:2b5::2

How can I set it up that the VPN clients get 2001:xxd0:xxx:2b5::3, 4,5,6 and so on?

ISP is OVH. My understanding is that only IPv4 needed the vMAC shenanigans.

I also wanted to ask what is the difference between setting route and default route vs gateway for ipv6?

I have seen pritunl screenshots where there are options to rotue the subnet I am not sure if I dont get this because I am doing something wrong or thats a pritunl paid feature.
