Installing HA cluster with ceph on MacMinis with single disk

I have 3x MacMinis that have the 256gb SSD that I am trying to setup as a HA cluster with ceph for my home lab. I am trying to find out if I am wasting my time before I go further down the rabbit hole because I have read that the GUI does not support installing to partitions but only to full disks. From my limited research using the CLI you can setup ceph with LVM so I figured I would just install proxmox and start hacking away but I am also having issues even getting 8.1 to install and boot.

Given the fact that I can't install more disks on these machines is it too much effort to setup proxmox with ceph on these? My backup plan is using microk8s with ceph.
 
Ceph with one disk per node is not that cool, using partitions per disk does not help you in any way, so Im not getting your need for that feature? If a disk fails this is like a complete node failure. performance will also be bad, you need to write 3 replicas before you get the write acknowledged.

The setup is not more complex because of this, but it is still questionable if this setup will be good for your needs.
