Installation USB won't boot - Mac Mini 2009

I downloaded the 7.2 VE iso and tried to boot it on my 2009 Mac Mini (holding the Alt/Option key), but it gets stuck in a grey screen. W/o the proxmox USB stick, starting the machine with Alt/Option pressed shows me all available UEFI boot options (macOS, macOS Recovery, Fedora, ...) just fine.
I tried to create the USB 3 different ways - with balenaEtcher, dd on a Linux box and the hdutil/dd way described here - no difference.
I had no problems so far creating bootable USBs for other Linux distros - how do I need to create a Proxmox bootsable USB that works on an [older] UEFI Mac?
