Hello all I'm new to proxmox here i have put together a 2u AMD 3700x machine and looking to maybe move from unraid, for the boot media i have a couple of Intel s3710 400gb ssd's still in transit, i will be using 12tb wd drives for my mass storage and maybe xpenology as the nas side of it with shr2 for future expandability.

1. I would like to know when i install proxmox can i use 3x 400gb drives for the install as zfs raidz1, store iso's, run vm's and lxc's from that as well.
2. The other option is i have a spare 512gb NVME drive i could use for VM's and LXC's (whats the best format ext4, xfs, to use for the nvme?) then maybe back them up to the boot drive (leaning this way).
3. Do I just point the bios to boot order from drive 1 then drive 2 for fail over if one of the drives fails? I'm not sure how zfs works as boot media

Any other tips and tricks appreciated

bonus question, I have a LP GTX 1650 can it be passed through to multiple containers? like the nvidia plugin for unraid allows and like unraid I'm guessing that it can't be used in a VM if passed to plex/emby

Yes, though if you plan to run a few VMs on it, you should consider a RAID10 like setup because it performs better in regards to IOPS. This will need at least 4 disks though.

If you are okay with the possibility to lose some data in case the NVME fails. I personally will only run VMs on storages which are at least mirrored.

The bootloader section in the admin guide should give you a good overview of how the PVE installer sets up the boot process. https://pve.proxmox.com/pve-docs/pve-admin-guide.html#sysboot
