What can I do to increase the spam accuracey, I am still receiving 2-3 spam mails a day, which do not get me wrong it is better then the 7-8 messages I was getting. But is there a way to make the detection better, I dropped the spam detection level to 3. Also, on the spam emails I do receive, is there a way to look at the header of the message and determine why it was not filtered. One spam I received was not even addressed to my email address.

you can add a simple rule, showing the results of spam analysis in each message header (for ham and spam).
Action object "Modify Spam Level":
please change the value field to "__SPAM_INFO__"

Proxmox also gathers statistical information about spam e-mails. This information is used by an auto learning algorithm, so the system becomes smarter over time.
please also make sure that your Proxmox has access to RBL list, razor and DCC network (check your firewall settings)
