Good morning i would like to use the VMware image format disk to create new Vms, in oder to export disk to VMware, but the option is grayed out. How can i select it?

Hi,
some storage types (ZFS, LVM, ...) only support raw files. You need a filesystem-based storage (e.g. Directory, NFS, CephFS, ...) to select other formats.
As a quick follow up, depending on the storage type (ZFS, LVM, Ceph, ....) files are not used at all to store the VMs disk but are rather directly stored (in RAW format) on dedicated volumes.
