i have 500gb nvme but proxmox use only 100gb

Usually you got two storages. One "local" which I guess is 100GB and one "local-lvm" which is 400GB. You should store your guests on the "local-lvm" where you then got 400GB for virtual disks and not on the root filesystem (which is "local").
