I want to be able to plug one mic into a usb audio device and be able to use this mic for slack / meet / etc on any VM. Does proxmox have "virtual audio cables" or something along those lines?
I use one VM (with PCIe passthrough of GPU and USB with a real audio device) to use other VMs (with a virtual audio device) using SPICE. The audio of those other VMs is automatically connected to the audio inside that one VM. See https://pve.proxmox.com/pve-docs/pve-admin-guide.html#qm_audio_device for more details (but you can also add virtual audio device via the Proxmox web GUI and set the Display to SPICE (qxl)).
Alternatively, you could experiment with the various audio over the network options of Linux (but maybe that only works with Linux VMs).
