How to run 2 VM with 2 dedicated Graphic cards connected to 2 monitors

Dear all,

I just started my researches about VMs and it would be great if someone can suggest me how to start.

I would like to build a custom pc (i9 9900, 64GB ram, 3 SSD, 1 NVIDIA GPU + 1 Radeon)
I would like to explore the possibility to run 2 VM from this PC and dedicate 1 NVIDIA GPU for Windows VM and 1radeon GPU to Linux.
i would like to access simultaneously these two VMs with 2 monitors 2 keyboards and 2 mouses from the very same machine...and not install these vm to a server and access them with an other PC.

would it be possible?
